All equipment and machinery are technologically advanced. The wine cellars are also equipped with a computerised plant for controlling the must fermentation temperature and wine preservation.

The company also uses large and impressive caves excavated in the lavarock to produce the sparkling wine and to mature certain wines in special barrels. The constant temperature is always around 13°-14°C and the relative humidity is close to 100%. These are some important factors in the development of top-quality wine making.
